Staci Leibson – Life Coach at The Celiac Shift

Celiac Coach and Co-Founder of Community4Celiac

Staci Leibson is a celiac coach and the founder of The Celiac Shift, helping adults and families adjust to gluten-free living after a celiac disease diagnosis. She is also co-founder of Community4Celiac, a 501 (c) (3) that partners with Northwell Health to fund pediatric celiac research.

 Why This Work Started

In January 2022, Staci’s son Jude was diagnosed with celiac disease. The diagnosis came with a one-line instruction, “follow a strict gluten-free diet,” and almost no guidance on what to do next. That meant for school lunches, birthday parties, sleepovers, restaurants, family vacations, or the everyday decisions that fill a child’s life. Staci built her practice to close that gap for other families.

Background and Education

Staci holds an undergraduate degree in Social Work from Towson University and four Master’s Degrees in Childhood and Special Education from Hofstra University. She taught in general education and special education classrooms for more than eight years before transitioning to coaching. Combined with her social work background, active listening, behavior planning, family communication, and individualized instruction, maps directly onto the daily decisions celiac families face after diagnosis.

Community4Celiac and Northwell

Staci co-founded Community4Celiac with her business partner, Marci Launer. To date, they have raised over $150,000. They have helped start staffing the new Celiac Disease Center at Cohen’s Children’s Hospital, a division of Northwell Health. Northwell has already begun building a critical database that will serve as the foundation for current and future research. We are excited to share that three research studies are now underway because of the money they raised.

Scope of Practice

Staci’s work focuses entirely on real-world implementation, home routines, school advocacy, social settings, dining out, travel, and family communication. Staci’s work is non-medical. She does not diagnose, treat, or prescribe.
